In May 2009, the recession hit hard, and Nyk was permanently laid off after over ten years as an Executive Assistant. During her intense job search, she picked up a hobby of jewelry making just to pass the time. Little did she know, this hobby would turn into a thriving business.
My jewelry line, particularly the Abalone Shell Collection, caught the eye of a lovely boutique "Things & Fashion" in Winter Park, FL The store owner, Julius, graciously elegantly showcased my pieces. Then life threw her another curveball with a breast cancer scare, which led to the discovery of a benign fibroid tumor that required surgery removal. Thankful non-cancerous! But that wasn’t the end of my health journey.
Working through being fatigue, and later , she was diagnosed with Iron Deficiency Anemia, which brought her face-to-face with the power of beet roots. Nyk discovered beets are packed with iron, folate and natural nitrates, and she knew instantaneously she needed to incorporate them into my diet.
However, she never had a taste for beets. I honestly found them disgusting at first! But as she dug deeper into the health benefits, her curiosity turned into passion. Nyk was determined to make beets not just nutritious, but also delicious. And that’s when she began creating a whole line of beet-based products! She threw out her childhood misconceptions about beets and embraced the idea of making them more palatable and enjoyable for everyone, including the new generation of health-conscious eaters. From there, she created my first beet-based product, Beet Relish, and the rest is history. One of the most exciting creations to come from this beet journey? The Royal Beet Chocolate Truffle! Yes, you read that right – beet and chocolate! An unexpected yet insanely delicious combination that you have to try to believe.
